Anna's White Chocolate Cheesecake

Ingredients

For the Base

200g plain chocolate digestive biscuits
50g unsalted butter

For the Filling

300g quality white chocolate, broken into pieces
400g full fat soft cheese
150ml soured cream
2 eggs
1 tsp vanilla extract

 

Method

1. Pre-heat the oven to 160°c.
2. Make the base : put the biscuits in a plastic bag and crush with rolling pin. Melt the butter in a small non-stick pan, then stir in the biscuit crumbs and stir well. Use the back of a metal spoon to press the mixture evenly into the bottom of a deep, loose bottomed 18cm cake tin, then chill.

3. Make the filling : Melt the white choclate in a heatproof bowl set over a pan of simmering water.  In another bowl mix together the soft cheese, sour cream, eggs and vanilla with a wooden spoon.  Add the melted chocolate then stir until smooth.

4. Spread the mixture evenly over the cilled biscuit base and level the top.  Bake for about 50 mins until the mixture feels firm around the edge and is slightly soft but set in the middle.  Remove from the oven and leave to cool.  Carefully remove the cheesecake out of the tin and chill. Decorate with strawberries and chocolate curls when ready to serve.
