Tomato and Chilli Relish

Ingredients

  • 1kg tomatoes
  • 2 large green chillies (to taste)
  • 4 tbsp brown sugar
  • 2 tbsp red wine vinegar
  • 3 tbsp Balsamic vinegar
  • 6 cm Ginger, grated
  • 4 cloves Garlic, finely chopped
  • 5 tbsp extra virgin Olive oil

 

Method

1. Remove and discard the green stem part from the tomatoes and chop them roughly.

2. Blend the tomatoes together with the rest of the ingredients in a food processor. It's best to do this in two batches as it is very liquid and can make a bit of a mess.

3. The purée should be quite fine but still a little chunky.

4. Put the purée in a large shallow pan and cook over a low- medium heat, stirring frequently for about 45 minutes. Cook until almost all of the liquid evaporates and the relish is the texture of jam. You can add extra chilli powder/cayenne pepper to taste if you like it a bit more fiery!!

5. Cool and store in airtight containers.
