Ingredients
Method
1. Remove and discard the green stem part from the tomatoes and chop
them roughly.
2. Blend the tomatoes together with the rest of the ingredients in a
food processor. It's best to do this in two batches as it is very
liquid and can make a bit of a mess.
3. The purée should be quite fine but still a little chunky.
4. Put the purée in a large shallow pan and cook over a low- medium
heat, stirring frequently for about 45 minutes. Cook until almost
all of the liquid evaporates and the relish is the texture of jam.
You can add extra chilli powder/cayenne pepper to taste if you like
it a bit more fiery!!
5. Cool and store in airtight containers.
