Uma's Potato Vada

Ingredients

½ kg Potatoes
Gram flower powder (Besan)
Salt
A little yoghurt
1 onion  finely chopped
½ small chilli
½ tsp turmeric powder
a pinch cooking soda
Water
a small bunch coriander
Oil for frying
1 tsp Mustard seeds
1 tsp White dal
1 tsp Cumin

 

Method

1.  Cook potatoes and mash well
2.  Heat 1 tbsp oil and add mustard, dal and cumin and wait for it to splutter.
3.  Add green chilli and onions and fry
4.  Add turmeric
5.  When onions are done remove from fire and add to the mashed potatoes
6.  Add salt and coriander and make small balls and keep aside
7.  Take the gram flower in a bowl and add salt, pinch turmeric, pinch cooking soda
8.  Add well beaten yoghurt, water as required and beat the mixture thoroughly
9.  Dough should be thick paste consistency—add more water of too thick or add more powder if too thin
10.  Dip rolled potato balls in dough and deep fry till golden
11.  While frying, gas should initially be in the high position and after 1 turn, lower the flame.

Especially tasty served with a tamarind sauce
