Rachel's Fried Rice

Ingredients

1/3 cup low-sodium soy sauce
2 tbs veg stock
1 tbs rice vinegar
2 tsp dark sesame oil
1 tsp chili sauce
1/4 tsp salt
1/4 tsp black pepper
5 tsp canola oil
2 cups shredded green cabbage
1/2 cup sliced green onion
1.5 tsp minced fresh ginger
5 cups cooked long grain rice
5 cups any veggie you want (carrots, peas, red pepper...anything that sounds good to you)
1/3 cup chopped fresh cilantro


 

Method

1) combine first 7 ingredients in a small bowl, stirring with a whisk until well blended.
2) heat oil in a large skillet over med-high heat. Add cabbage, onions and ginger to pan; saute 3 min or  until tender. Add rice and veggies; saute 3 min or until heated. stir in soy mixture; cook 2 min. remove from heat and stir in cilantro. (sometimes i add peanuts on top too).
