Miriam's Chai Tea

Ingredients

1-1½ cups water
1 inch stick of cinnamon
8 cardamom pods
8 whole cloves
¼ inch of fresh grated ginger
¾ cup milk
6 tsp. sugar (or to taste)
3 teaspoons any unperfumed loose black tea (or a couple of tea bags)


 

Method

1. Put water in saucepan.

2. Add the cinnamon, cardamom, and cloves and bring to a boil.

3. Cover, turn heat to low and simmer for 10 minutes.

4. Add the milk and sugar and bring to a simmer again.

5. Throw in the tea leaves, cover, and turn off the heat. After 2 minutes, strain the tea into two cups and serve immediately.

 

This is a really flexible recipe - try experimenting with the balance of spices until you get the taste you like.  You can also replace the water with milk if you prefer.
